Garlic Kale Pasta Recipe [with shrimp]

Good Afternoon!! It has really been a minute since I posted a recipe, some of it due to my laziness and some due to my lack of creativity. I have not been cooking lately, and whenever I have done some cooking, it was usually the same ol’ same ol’….LOL
so today I decided to try something new especially since I have a great love for pasta (YUMMM) and I recently discovered how kale could be quite amazing!!
What you will need
  • spaghetti (3-4 servings)
  • 3 tablespoons of olive oil
  • 4 garlic cloves
  • 6 medium sized tomatoes
  • 2  cups of kale
  • Parmesan
  • Salt & spices (pepper, cilantro and 2 broth cubes)
  • butter or margarine
  • ginger
  • 1/4 onion
  • 1/2 bag of medium cooked shrimp

Rinse and thinly slice the garlic cloves

In a frying pan, add the olive oil, then add garlic and sauté it till it is browned, stirring frequently…

while the garlic is sautéing, boil half a pot of water for the pasta

slice the onion in thin long slices, and slice the tomatoes as well….

using a cheese grater, grate the ginger..

add everything and spices to the mix and stir-fry…….

while the water is boiling, add 1 tbs of butter and 1 tsp of salt to the boiling water, then add the pasta…do not close the pot.

when the stirfry mix is well seasoned and done, add the shrimp and stirfry till it is cooked…

Add the Kale and lightly cook it (you do not want to over cook the kale)
pasta should be cooked by now, drain, and add to the mixture
serve & enjoy your meal

That’s all of it for my new favorite pasta recipe!! its soo yummilicious!!

I am currently listening to Christmas music on Pandora as I type this post, I usually listen to BarlowGirl radio every year…

My favorite song: Hallelujah (Light Has Come) by BarlowGirl

wishing you all a merry Christmas and a happy new year!
